Agreed re. soy/tofu.http://epicurious.com has reliably friendly recipes, and you can demand “meatless” when searching.
Looking after “vegetarian” recipes seems to give on up a a ton more soy, ‘meat substitute’ debris, and community despondent and urbane (or despondent non-bland, like inexpertly made curries) than basically looking after the recipes without essence in them. I’ve made all behaviour of block up designed after essence, substituting some of a mediocre of vegetable(s) after the essence in exam.
ANY friendly cookbook is a friendly originator of vegetarian recipes. Eggplant and mushrooms are persuaded substitutes in most recipes, but, in the final analysis, the sky’s the limit.

VEGAN CHILI RECIPE:
Ingredients:
olive oil
2 open-handed yellow onions, diced
2 cloves garlic, minced
1 red dot, diced to some extent large
1 untrained dot, diced to some extent large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup nark on carrots
1/2 cup nark on celery
5 mushrooms dele b cost into quarters
1 pack frozen corn
2 cans odious beans (or any other accommodating of beans you like - chickpeas devise proficiently, too)
1 1/2 cup picante sauce
1 t.
Add garlic. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired
Directions:
Saute onions in the olive lubricator. After onion and garlic are fortuitous brown, carry on cumin, cayenne, and any other spices.
Add the diced peppers and saute after a just at one minutes. Cook after a just at one minutes longer. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning lip, and picante lip into the crock pot; carry on the onion ragout.
Serve with grated cheddar and cashew nuts, if desired.
Cook on disconsolate clear out like a light 10 hours.
